Bread machine banana bread is a quick bread made in the bread machine. There’s no yeast, just baking soda and powder, resulting in a classic banana bread loaf right from your bread machine.
Bread machines are best known for being labor saving devices that allow you to bake homemade bread with just a few minutes of effort. They’re mostly used for yeasted bread and sandwich bread, like this basic bread machine white sandwich bread.
That said, they can also be used to make “quick bread” or “tea bread” loaves like banana bread and pumpkin bread. They’ll also make pound cake, coffee cake and cornbread!
Just about every bread machine has a “quick bread” or “cake” setting which just mixes the ingredients and then bakes the bread without a rise cycle. Add your ingredients, select the “cake” setting and you’ll have tasty homemade banana bread from the bread machine!
Ingredients for Bread Machine Banana Bread
You can try making just about any banana bread recipe in the bread machine, like my maple banana bread recipe, and many will work out just fine. The main difference in specific banana bread recipes for bread machines is they tend to have a bit less banana, and a good bit more leavening (baking powder and baking soda).
This is because bread machines bake a bit differently than a regular oven, and if there’s too much banana in there and not enough levening, you’ll end up with a bread “puck” instead of a fluffy loaf of soft banana bread.
This bread machine banana bread recipe is adapted from the recipe book that came with my Zojirushi bread machine. For one loaf, you’ll need the following ingredients:
- 3 eggs, beaten
- 1/4 cup oil (or melted butter)
- 1 tsp. vanilla extract
- 1 cup very ripe banana, mashed
- 2 cups flour
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 3/4 cup sugar
- 1/2 tsp. salt
If you’d like, you can make bread machine banana nut bread by adding in 1/2 cup of chopped nuts such as walnuts of pecans at the “mix in” beeper, toward the end of the mixing cycle before the bread bakes.
How to Make Bread Machine Banana Bread
Baking banana bread in a bread machine isn’t all that different from any other bread machine recipe. The main thing to note here is that you want to select the cycle on your machine that doesn’t have a rise. That’s usually called “quick bread” or “cake,” but the cycle name will vary depending on your bread machine manufacturer.
Start by adding all the ingredients into the bread machine in the order listed in the recipe.
The wet ingredients go in first at the bottom of the pan. Mash the bananas and beat the eggs before adding.
Next, make an “island” with the flour on top of the wet ingredients. Make a few wells in the flour to hold the dry ingredients, especially the baking powder and baking soda. Those two shouldn’t get wet until the cycle starts (salt and sugar are less crutial, and can spill a bit into the wet).
Either select a time delay setting, or start your bread machine right away. If you do select a time delay, don’t go for more than a few hours. There’s raw eggs in this bread, and they shouldn’t sit out in the machine for too long before baking.
When complete, open the top and allow the bread to cool for 5 to 10 minutes before removing the pan and taking the bread out to cool completely on a cooling rack.
